Baked Avocados with Eggs
Freshly ground black pepper
Cut avocados in half and remove pit. Crack one egg in each half of avocado, sprinkle with salt and black pepper to taste. Bake at 350 for 15 minutes for runny eggs and 20 for fully baked eggs. Remove from oven and sprinkle with diced green onions and feta cheese. For added flavor add a touch of cayenne with salt and pepper and top with bacon bits or roasted cherry tomato halves.
