Featured Recipe: Randi’s Bacon-Wrapped Butternut Squash Bruschetta

Ingredients:
Cubed Butternut Squash
2 Yellow or White Onions
Fresh Black Pepper
Ground Rosemary (*this way you don’t have “sticks” in your food)
Nutmeg
Bacon
Goat Cheese
French Bread
Olive Oil

Directions:
1. Preheat oven to 350 degrees.
2. Coat the Butternut Squash cubes in olive oil, and wrap each piece with half of a slice of bacon. Place on baking sheet, folded side down, leaving space between each piece.
3. Lightly season with pepper, rosemary, and a smidge of nutmeg. Bake for 25 minutes.
4. Meanwhile, caramelize your onions in a skillet.
5. Remove pan from oven, flip each piece over carefully, and bake for another 25 minutes.
6. Cut your French Bread into about 1 inch slices, using a bread knife. Toast in the oven just until golden brown.
7. Smear Goat Cheese on each slice of crusty French Bread, top with some caramelized onions, and then finish with the Bacon-Wrapped Butternut Squash bites.
8. ENJOY! Pairs wonderfully with a nice White Wine and Great Friends!
