Featured Recipe:  Mango Sticky Rice

4 ripe mangos
3 cups sushi (sticky) rice
1 14oz can coconut milk or 2 cups fresh
¾ cup brown sugar
1 tsp salt

Soak rice overnight in water or thinned coconut milk. Drain and steam until tender. In separate pot on medium high, heat coconut milk enough to dissolve sugar and salt. Then, place tender rice in bowl and slowly add coconut mixture, then let sit for 20 minutes – 1 hour. Serve with either sliced mangos or mix in mango cubes prior to serving. For added flavors, garnish with fresh mint or Thai basil.

Predictions of wintery mix and snow on the ground still don’t stop us from having local produce available straight from our P6 farms! Plus, this is the time of year where we like to touch base with the core group of our producers to plan for what’s ahead next season. Recently we made plans with Villines Family Farm and Sycamore Bend to source the larger crops, as well as plan out our 2016 baby chicken sale! Seeds have been ordered for a wide range of food grown locally for us including green kale, rainbow chard, a variety of lettuce heads, dandelion greens, tomatoes, eggplant, bell peppers, hot peppers, red radishes, basil, a good mix of fresh herbs, cucumbers, strawberries, blackberries, raspberries, cabbage, green beans, collards, sweet Japanese baby turnips, rhubarb, pie pumpkins, heirloom pumpkins and winter squash, butternut, acorn, delicate winter squashes, a colorful mix of potatoes, sweet potatoes, fingerling potatoes, and of course, 6 yet to be determined varieties of baby chickens raised on our organic chicken feed!

That is quite a list! The majority of producers we work with in the Fresh Foods departments have been working with us for over five years, and some as long as ten, twenty, and twenty-five years! In 2015 we worked closely with our producers to procure over $200,000 worth of locally grown fruit, veggies, plant starts, and baby chickens!!! We’re looking forward to the harvests of the upcoming season, even in the deep of winter.
