Green Garlic Aioli

1/3rd cup green garlic, minced
1 egg
1 tsp Dijon mustard
1 1/3rd cups olive oil
1 tbsp lemon juice
1 tsp sea salt
1/2 tsp freshly ground black pepper

In food processor, blend garlic, egg, and Dijon until smooth. While running, slowly mix in oil until well incorporated, about 3 minutes, then add lemon juice, salt, and pepper. Use this as a dressing for steamed asparagus or roasted spring veggies, on a burger, over spring greens in a salad, as a dip for artichokes, pita chips, or spread on warm baguette bread!
