Homemade Fridge Pickles
By Heather Artripe, Outreach Coordinator

Homemade Fridge Pickles are so simple to make! The hardest part is waiting a couple of weeks for their delicious flavors to develop. Here is a simple recipe to make your very own homemade pickles!

4 Pickling Cucumbers
1 quart water
2 cups white vinegar
2 tbsp canning salt
A few sprigs of fresh dill (loosely about a cup, un-chopped)
4 cloves garlic, smashed
3 tbsp Heather’s Pickling Spice (recipe below)

In a saucepan, add your water, vinegar, and salt, and boil it until the salt dissolves.
Place 3 tablespoons of the pickling spice in the bottom of your jar.
Add the garlic and dill.
Cut your cucumbers however you like. You can do spears, coins, etc.
Fill your jar with them.
Cover your cucumbers with the brine. Run a chopstick or kabob stick around the inside of the jar to remove any air bubbles.
Once everything is covered, place in your refrigerator for a few weeks to let the flavors develop.

Heather’s Pickling Spice
2 tbsp mustard seeds
2 tbsp peppercorns
2 tbsp dill seed
2 tbsp coriander seeds (If you don’t like cilantro leave this out!)
2 tbsp allspice berries
2 or 3 bay leaves crushed up
1 tsp red pepper flakes (If you don’t want it spicy leave this out.)

Mix all together and keep in a jar. You can make more, just do equal amounts of everything except red pepper flakes.
