Save your carrot top greens!

Ingredients

1 bunch Carrot tops from organic carrots

2 organic garlic cloves

1/2 cup walnuts

1/2 cup Bel Gioioso parmesan cheese

1/2 cup Riojana olive oil

2 Tbsp. organic lemon juice

salt and pepper to taste

Preparation

Step 1

In your walnuts and garlic cloves to a food processor, pulse a few times.

Step 2

Add in your cheese, pulse a few more times.

Step 3

Add in salt and pepper.

Step 4

Add in some of your greens, pulse

Step 5

Add in some olive oil and lemon juice, pulse

Step 6

Repeat this with the greens and liquid until it reaches the consistency you like.

Step 7

Taste and adjust as needed.
