Feta & Cucumber Stuffed Tomatoes

4-6 medium large slicer tomatoes
1 medium cucumber
½ cup finely chopped basil
1 cup feta cheese
Balsamic vinegar
Freshly ground black pepper

Cube cucumbers and set aside on a paper towel to drain. Scoop out interior of tomatoes (you can save this for salsa or other tomato-based sauces). In a bowl, mix cucumber, feta, vinegar, basil, and black pepper until well incorporated. Stuff this mixture into the tomatoes and serve.
