Elotes

¼ C sour cream
¼ C mayo
¼ C parmesan cheese, more for garnish
2-3 T minced cilantro, more for garnish
1-2 t lime juice
1 t chili powder, more for garnish
1 t smoked paprika
Salt and Pepper to taste
4 ears corn, shucked
Lime wedges, to serve

 

Combine all ingredients except corn in a bowl, mix together and taste. Adjust if needed.
Once grill is hot, place corn on grill, and cook for 8 minutes, rotating until cooked on all sides.
Remove from grill, allow to cool just a bit.
Using a brush, brush on creamy mixture.
Sprinkle with additional cheese, chili powder, lime juice, and cilantro
