2 1/4 cups Wholesome powdered sugar
1 tsp. Café Altura Instant Organic coffee
1/2 tsp. Kosher salt
1 cup Equal Exchange Baking cocoa powder
3 Happy Egg Co egg whites
1 tsp. Frontier Co-op vanilla
2-3 Tbsp. water
1 cup Enjoy Life mini chocolate chips
Line a baking sheet with parchment paper or a silicone mat. Lightly grease or spray. Set aside.
In a bowl, add your dry ingredients, powdered sugar, instant coffee, salt, and cocoa powder. Whisk and set aside.
In large bowl, whisk together your eggs and vanilla.
Whisk the dry ingredients into the wet ingredients. Add water a tablespoon at a time until no lumps remain. Scrap the sides and bottom to make sure everything is incorporated.
Fold in your chocolate chips.
Scoop the batter onto prepared baking sheet using a tablespoon or an ice cream scoop.
Let the cookies rest on the baking sheet while you preheat the oven.
Preheat oven to 350. Bake for 10-12 minutes.
Remove from oven and allow to stand on the cookie sheet for 5 minutes. Remove to a wire cooling rack.
