Loaded Baked Cauliflower Casserole

Who knew cauliflower could be so savory and indulgent?

Ingredients

1 Head organic cauliflower, cut into florets

1 Cup Organic Valley sour cream

2 Cups Tillamook shredded cheddar cheese, divided

4-5 organic green onions, sliced

8 oz. Applegate Naturals bacon, cooked and crumbled

1 Tbsp. Frontier Co-op garlic granules

pinch of Red Pepper Flakes

salt and pepper to taste

Preparation

Step 1

Preheat your oven to 350 degrees.

Step 2

Steam your cauliflower for about 3 minutes. Remove from pan and let cool.

Step 3

Spray your cooking dish with nonstick cooking spray and set aside.

Step 4

In large bowl mix together the sour cream, ½ cup of the cheese, half of the green onions, and half of the bacon.

Step 5

Add garlic, salt, and pepper

Step 6

Chop up your cauliflower into smaller pieces and gently stir into the cream/cheese mixture. Season again with salt and pepper.

Step 7

Spread out into the baking dish and sprinkle the remaining cheese and bacon on top.

Step 8

Cook for 15-20 minutes or until cheese is melted.

Step 9

Sprinkle with the other half of green onions before serving.
