Potato Skin Chips

Save those scraps! This zero-waste recipe is a great way to use your food scraps to the fullest and satisfy those cravings.


½ lb. organic Russett potato peels, washed and dried

1 Tbsp. bulk olive oil

1 tsp. kosher salt

1 tsp. freshly cracked black pepper

Seasonings of choice such as smoked paprika, onion powder, garlic powder, rosemary, thyme, etc.


Step 1

Preheat oven to 400. Line a baking sheet with parchment paper.

Step 2

Add washed and dried potato peels to a wide bowl. Drizzle over olive oil, salt, pepper, and seasonings. Toss to combine.

Step 3

Place on the baking sheet in one layer.

Step 4

Roast for 15-20 minutes, stirring at 10 minutes.

Step 5

Remove from the oven when they are the right level of done for you. Cool a bit and enjoy with your favorite dip!
