Raw Veggie Dip

Don't let those veggies go to waste! Use up whatever you've got on hand to make this fresh and flavorful raw veggie dip.


2 C organic cashews, soaked for 1 hour

3 stalks organic celery

1 organic bell pepper

½ organic onion

3-4 cloves organic garlic

2 Tbsp. fresh parsley

2 Tbsp. fresh thyme

1 organic tomato, quartered

Juice from 1 organic lemon

Fresh ground black pepper + kosher salt


Step 1

Drain your cashews and add to a blender or food processor. Pulse a few times to break down the cashews.

Step 2

Add in your celery, bell pepper, onion, and garlic cloves, pulse to break down.

Step 3

Add in your parsley, thyme, tomato, and lemon juice. Pulse to break down.

Step 4

Season with salt and pepper. Taste and adjust as needed.
