Let it snow, let it snow, let it snow

Ingredients

1 cup Organic Valley unsalted butter, softened

½ cup Wholesome organic powdered confectioners sugar

1 tsp. Frontier Co-op vanilla extract

1 tsp. Simply Organic almond extract

1 tsp. kosher salt

1 cup bulk almond flour

2 cups War Eagle Mill all-purpose flour

1 ½ Wholesome organic powdered confectioners sugar

Preparation

Step 1

Preheat oven to 325.

Step 2

In a large bowl, or the bowl of a stand mixer, beat together the butter, sugar, extracts, and salt. Using a spatula to clean the sides of the bowl.

Step 3

Next, add in your almond flour, beat until mixed in.

Step 4

Add in your all-purpose flour and beat until just combined.

Step 5

Spray a tablespoon with cooking spray. Use this to portion out your dough. You might have to do this again before you are done. Once the dough starts sticking to it, spray again. Once you have all of your dough portioned, spray your hands lightly with cooking spray and roll into balls. Place them 2” apart.

Step 6

Bake for 10 minutes. Turn the baking sheet around and cook for another 5-7 minutes.

Step 7

Remove the cookies from the oven, allow them to cool on the pan for a few minutes.

Step 8

Place the remaining powdered sugar in a bowl.

Step 9

Roll the cookies through the powdered sugar and set aside. Allow to cool completely before eating.
