2 Tbsp. Vital Farms unsalted butter, room temperature
1 1/4 lbs. organic turnips, peeled and sliced very thin*
8 oz. Red Apple Smoked Gruyere cheese, shredded
4 oz. Be Gioioso Parmesan cheese, shredded
2 Tbsp. Vital Farms unsalted butter, diced small
1-2 Tbsp. Organic Valley heavy cream
1 tsp. bulk kosher salt
1 tsp. bulk black pepper
1 tsp. bulk smoked paprika
1 tsp. bulk garlic granules
1 tsp. bulk thyme
1/2 tsp. bulk onion powder
½ tsp. bulk rosemary powder
2 Tbsp. fresh parsley, for topping, (optional)
Step 1
Preheat oven to 375.
Step 2
In a 9x13 pan, use your unsalted butter to grease the bottom and sides.
Step 3
In a small bowl, mix your kosher salt, butter, smoked paprika, garlic, thyme, onion, and rosemary powder together. Sprinkle a bit of the mixture over the bottom of the dish on top of the butter.
Step 4
Add a layer of your sliced turnips, overlapping, over the bottom of the dish. Add a few pieces of your diced butter over the top of the turnips. Add a bit of your heavy cream over the top. It doesn’t have to cover everything. Sprinkle more of your spices. Add smoked shredded smoked gruyere cheese followed by parmesan. Repeat this process two more times.
Step 5
Place in the oven for 25 minutes, turning at the 20 minute mark.
Step 6
Turn the heat up to 400. Cook for another 5-6 minutes or until the top has browned.
Step 7
Remove from heat and allow to sit for 10-15 minutes before serving.
Step 8
Garnish with fresh parsley if desired.
*If your turnips are larger, you can slice them thinly and then quarter them.
