Vegan Chickpea Blondies

Classic blondies but with a vegan spin.


2 cans (15.5 oz.) Field Day Organic garbanzo beans, drained and rinsed well

1/2 cup nut butter of choice, we used Justin’s Peanut Butter

1/2 cup Wholesome light brown sugar

1 tsp. Frontier Co-op vanilla

1/4 cup Bob’s Red Mill almond flour

1/2 tsp. Kosher salt

1/2 tsp. Rumford baking powder

1/4 tsp. Bob’s Red Mill baking soda

3/4 cup Enjoy Life mini chocolate chips


Step 1

Preheat oven to 350. Spray an 8x8 pan with nonstick cooking spray.

Step 2

In a food processor, add all of your ingredients, except chocolate chips, process until batter is smooth. Remove the lid and blade. Fold in ½ cup of chocolate chips.

Step 3

Spread batter into prepared dish. Sprinkle the remaining ¼ cup chocolate chips over the top.

Step 4

Bake for 30-35 minutes or until a toothpick comes out clean.

Step 5

Cool in pan for 20 minutes.

Step 6

Once cool, cut into squares.

Step 7

Store leftovers in the fridge.
