Watermelon Feta Salad

The best part about summer is fresh watermelon all season long!


3 lbs. organic watermelon, cut into cubes

1 pint organic cherry or grape tomatoes, cut in half

2 organic cucumbers, peeled and sliced

1 small organic red onion, diced

20 organic basil leaves, chiffonade

½ C organic mint, minced

½ C crumbled Odyssey Traditional feta cheese

¼ C toasted bulk pistachios, diced

2 Tbsp. organic lime juice

2 Tbsp. Boykin Apiaries Honey

1 Tbsp. Riojana Olive Oil

Salt and Pepper to taste

Pinch Frontier Co-op ground clove


Step 1

In a small bowl, mix together your lime juice, honey, olive oil, salt, pepper, and ground cloves together.

Step 2

In a large bowl, add your watermelon, cucumber, onion, mint, basil, and pistachios. Stir to incorporate.

Step 3

Pour your dressing on top and mix.

Step 4

Fold in your feta.
