1 tsp. Frontier Co-Op Mexican oregano
1 tsp. kosher salt
1 tsp. fresh cracked pepper
½ tsp. Frontier Co-Op Paprika
½ tsp. Frontier Co-Op red pepper flakes
1 – 1 ½ lbs. Smart Chicken boneless chicken thighs or breasts
1 small organic white onion, diced
3-4 cloves organic garlic, minced
(2) 4 oz. cans Hatch Select diced green chilies
(2) 15 oz. cans Wild Harvest Organic Cannellini or reat Northern beans, drained and rinsed
2 cups Field Day chicken broth
8 oz. Organic Valley cream cheese
1 cup Stahlbush corn, thawed
For topping: grated cheese, sliced avocado, cilantro, jalapenos, lime wedges
Place your chicken in a bowl.
In a small bowl, mix together your spices; cumin, coriander, Mexican oregano, kosher salt, freshly cracked pepper, paprika, and red pepper flakes. Add to chicken and toss to combine.
Add seasoned chicken to the slow cooker. Add your onion, garlic, green chilies, beans, chicken broth.
Cover and cook until chicken is done. 7-8 hours on low or 3-4 hours on high.
Remove the chicken to a bowl, and with 2 forks, shred the chicken. Add it back to the slow cooker along with your cream cheese and corn, stir to combine. Cook for another hour on low.
Top with your favorite toppings.
