Maque Choux



A Cajun take on corn and peppers.


2 Tbsp. Riojana olive oil

1 organic onion, diced

1 organic bell pepper, diced

2 organic stalks celery, diced

3 organic garlic cloves, minced

3 cups Cascadian Farms corn kernels, fresh or frozen

2 organic tomatoes, diced

1/2 cup Organic Valley heavy cream

3 organic green onions, diced

Salt and pepper to taste


Step 1

In a large skillet, add olive oil. Bring to medium heat.

Step 2

Add in your onion, bell pepper, and celery over medium heat and sauté for 4-5 minutes.

Step 3

Add in your garlic cloves, cook for 30 seconds.

Step 4

Add corn and tomato, season with salt and pepper, cook stirring often for 5-10 minutes.

Step 5

Add in your heavy cream, cook for 2 minutes.

Step 6

Add in your green onions. Season with a bit more salt and pepper, cook for 5 minutes.
