(2) 15 oz. cans Wild Harvest Organic Garbanzo Beans, drained and rinsed
1 organic English cucumber, halved and sliced
1 organic red bell pepper, diced
1 cup organic grape tomatoes, halved
1 jar Mediterranean Organic Kalamata olives
¼ cup thinly sliced organic red onion
6 oz. Mediterranean Herb Odyssey crumbled feta cheese
¼ cup fresh organic parsley, minced
In a large bowl, add all of your salad ingredients. Toss together.
½ cup Navarino Icons olive oil
2 Tbsp. Estate balsamic vinegar
4-5 organic garlic cloves, minced
1 tsp. sweetener of choice
2 tsp. Daphnis and Chloe oregano
2 tsp. Daphnis and Chloe thyme flowers
1 tsp. Daphnis and Chloe rosemary
1 tsp. freshly cracked black pepper
½ tsp. kosher salt
2 Tbsp. organic lemon juice
To make your dressing, add all of your ingredients in a bowl except the olive oil. Whisk to combine.
While whisking constantly, slowly stream in your olive oil, starting with a drop at a time, then slowly streaming it in until completely emulsified. Taste and adjust as needed.
Pour over salad and toss to combine. Allow to stand for 30 minutes for flavors to combine.
