Rainbow Chia Pudding


Ingredients

Standard Chia Pudding

1 1/2 Tbsp. chia seeds

1/4 cup + 2 Tbsp. coconut milk or other non-dairy milk

1-2 tsp. sweetener of choice, such as honey, maple syrup, Swerve

Red

1/2 cup raspberries

Orange

1/2 cup frozen mango

Yellow

1/4 tsp. turmeric

1/8 tsp. cinnamon

1/8 tsp. ginger

Pinch black pepper

Green

1/2 tsp. matcha tea

Blue

1/2 cup frozen blueberries

Preparation

Step 1

Mix everything together in a bowl or jar.

Step 2

After 5 minutes, stir again so the chia seeds don’t clump together.

Step 3

Cover, and place in fridge for at least 3 hours, even better overnight.

Red

Step 4

½ cup raspberries blended with coconut milk & sweetener of choice. Pour into container and stir in chia seeds. Top with additional raspberries if desired.

Orange

Step 5

½ cup frozen mango blended with coconut milk & sweetener of choice. Pour into container and stir in chia seeds. Top with additional mango chunks if desired.

Yellow

Step 6

¼ tsp. turmeric, 1/8 tsp. cinnamon, 1/8 tsp. ginger, pinch black pepper, blended with coconut milk & sweetener of choice. Pour into container and stir in chia seeds. Top with shredded coconut if desired.

Green

Step 7

½ tsp. Matcha tea blended with coconut milk & sweetener of choice. Pour into container and stir in chia seeds. Top with diced kiwi if desired.

Blue

Step 8

½ cup frozen blueberries blended with coconut milk & sweetener of choice. Pour into container and stir in chia seeds. Top with additional blueberries if desired.
